Well I can tell you what I know since I don't live there. :) But anyways.. Exchange some USD to HKD at the airport. The exchange rate is about 1:8. Take the train from Airport to HK Central. Buy round trip at the airport as that will cost only $100HKD. Once you come out of the station, you can go around, take a trip on the ferry, go to the hill where they have the cable car, go to SOHO etc. There are nice Dim Sum places on SOHO. Food will be expensive but 1000 HKD will be enough for 2 people. Taxi Cabs will cost you anywhere from HKD 25+ depending on how far you go. I'd say no more than 50 or 60 per ride though. Another thing to consider is to get a tourist bus once you are in HK Central. Enjoy your trip

You'll need tourist visa once you step out of the airport. But I have no idea on jewelers.

As far as I know, there is no on arrival tourists visa for PR. I tried that in 2008.

Keyser, you can take a train to Kowloon station from the airport and take a taxi to Jordan from there, which takes about 5-10 minutes. you will see many Nepalese and Nepali shops around that area(including Jewellery shops) if your final destination is not Nepal, they have many Nepalese restaurants if you are craving for some Nepalese food. you can take bus/taxi/train to Tsim Tsha Tsui(10 mins away) for shopping or to see the harbour view.
